Smokey Lips Barbecue Aims for Back-to-Back Wins at Indio International Tamale Festival
The 33rd annual Indio International Tamale Festival is back in town, bringing one of the Coachella Valley’s most beloved holiday traditions to life once again. Among the hundreds of vendors, one familiar name is returning with big ambitions: Smokey Lips Barbecue, the reigning first-place winner in the festival’s tamale competition.
Owner and chef Adam Morales has spent years in professional kitchens, working in and running multiple restaurants before launching his own barbecue restaurant and catering business. Last year marked his first time participating in the festival. He didn’t originally plan to enter the contest, but on a whim, he delivered his tamales to the judges — and by that afternoon, he was crowned the winner.
Morales says his motivation comes from his heritage. Childhood memories of his mother and aunts gathered together during the holidays, rolling tamales in a bustling kitchen, continue to shape his cooking today. While he never learned to make tamales beside them, those flavors stuck with him. Now, he brings those family traditions forward with every bite he serves.
What sets his food apart, Morales says, is how he blends cultures into one cohesive dish. He credits his training in classical French cuisine for giving him the techniques to elevate the flavors he grew up with. His tamales honor tradition while adding creative twists that reflect his passion and personality.
As he returns to the Indio International Tamale Festival this weekend, his goal is simple: keep the line long, make his family proud, and hopefully take home another first-place title.
