Waters Café Unveils Fresh, Locally Sourced Menu at Agua Caliente Casino Rancho Mirage
Waters Café at Agua Caliente Casino Rancho Mirage has long been a go-to spot for breakfast, lunch, and dinner. But with the start of the new year comes fresh flavors, as the restaurant unveils an updated menu that emphasizes farm-to-table ingredients, healthier options, and a variety of dishes catering to all palates.
On Desert Living, Vice President of Food & Beverage Sandy Josephson and Executive Chef Juan Morales provided insight into the inspiration behind the latest offerings. “We review our menu every six months to see what’s working and what’s not,” Josephson explained. “This time, we really focused on locally sourced ingredients, healthier options, and sustainable choices.”
The updated menu features a variety of new dishes, including:
Brick Chicken – Served with boysen mashed potatoes, broccolini, and chicken jus
Protein Bowl – A nutritious breakfast dish with ground turkey, squash, spinach, egg whites, and avocado
Braised Short Rib Eggs Benedict – A creative twist on the classic brunch favorite
While healthier and gluten-free options are a major focus, Morales assured that indulgent dishes remain available. “We’ve got something for everyone, from vegetarian and protein-based meals to ‘guilty pleasures’ for those looking to treat themselves,” he said.
The menu was crafted through a collaborative process, incorporating input from line cooks to senior leadership. “We take inspiration from the incredible farms in the Coachella Valley,” Morales added. “It’s about creating dishes that reflect both quality and diversity.”

Palm Springs is mourning the loss of beloved entertainer James “Gypsy” Haake, who has died at 94. Haake began his entertainment career at just 19 years old as a Broadway chorus dancer. After retiring from the stage, he returned to performing at 82, becoming the host of Carnival Cabaret at Oscars in downtown Palm Springs.
