Aprueban programa temporal que permite a cocinas domésticas ser microempresas
La Junta de Supervisoras del Condado de San Diego votó hoy de manera unánime para dar pie a permitir que microempresarios utilicen cocinas caseras en el condado, como parte de un programa temporal.
Los supervisores aprobaron la primera lectura del decreto que permitía a las cocinas caseras, denominadas como “MEHKOs”, a operar por dos años.
La segunda lectura del decreto vendrá en la reunión para uso de tierra que tendrá la junta el próximo 26 de enero, si la junta vota a favor, las “MEKHOs” podrán empezar a operar 30 días después.
El decreto de las “MEKHOs” incluye requisitos o previsiones operativas en certificación de seguridad en los alimentos, áreas de almacenado de alimentos adecuadas, el número de “MEKHOs” permitidas por residencia, además de pruebas constantes para revisar el agua potable y otros aspectos.
Quienes inicialmente propusieron permitir a las “MEKHOs” operar fueron la Supervisora Nora Vargas y su colega Joel Anderson, en septiembre pasado.
De acuerdo con los supervisores, entre los beneficios de las “MEKHOs” se encuentran:
- Importantes oportunidades económicas a pequeña escala, con operacions caseras, principalmente operadas por mujeres, inmigrantes y personas de color.
- Promover que las operaciones de comida preparada en casa que existen actualmente, se regularicen para ser más seguras.
- Permitir a familiares que trabajan cuidando a algún enfermo o paciente de edad avanzada, a que puedan tener un muy necesitado ingreso.
- Creará una nueva fuente de ingreso complementaria para todas las familias que luchan contra los estragos de la pandemia del Covid-19.
- Permitirá probar recetas y aprender las bases sobre la operación de un negocio de comida a que quienes aspiran a ser propietarios de un restaurante.
- Brindará una mayor oferta de servicios de comida en ubicaciones remotas.
- Habrá más operadores de cocinas pagando impuestos estatales y adquiriendo licencias comerciales.
“Tenemos una oportunidad de apoyar a los emprendedores no tradicionales, que han sido parte de la economía informal existente en las últimas décadas”, dijo Vargas este miércoles.
“Esta política va a eliminar las barreras, traerá un cambio transformador que además nos brindará deliciosas opciones de comida”, añadieron.
Anderson dijo que hay 100 “MEKHOs” operando actualmente en 24 ciudades del país.
Además añadió que las cocinas caseras no son una competencia directa de los restaurantes establecidos, sino que por el contrario, permiten a los dueños avanzar en esa dirección si su menú funciona.
Por ejemplo, es altamente improblable que alguien maneje desde Alpine a Del Mar por una “MEHKO”.
“En todos los niveles me parece un programa fantástico”, añadió Anderson.
